Gail Bornhorst is an assistant professor at the University of California Davis, where she received her PhD in 2012. Her research focus is in food engineering and processes of food digestion, including physical, chemical, and structural breakdown of foods in the gastrointestinal tract. She was the recipient of the Mentoring at Critical Transitions Fellowship Award in 2015.
