Aubry Walch has spent the last several years perfecting deliciously deceiving meat-free meats and cheese-free cheeses and, in January 2016, opened the world's first all-vegan butcher shop The Herbivorous Butcher with her brother Kale. Their small batch from scratch vegan meats and cheeses are sold out of their Minneapolis, MN shop and are also shipped to individuals and restaurants across the country. To further their mission to improve the health of people, animals, and the environment, the brother and sister duo are planning to open several more shops and a farm sanctuary called Herbivorous Acres by the summer of 2018.
